Ciao Everyone!

I wanted to share with all of you a little bit of my story and most important WHY I wanted to make this course.

I've always been a really creative kid, I started to help my mom in the kitchen since I was little and one day coming home from school the teacher gave us a math problem as homework. The math problem was a cake recipe, of course the measurement weren't proportional, but i wanted to make the cake anyway. That was my very first cake, I was 9 years old and I decided that making cakes would have been my mission, my passion and my job.

Of course if you are wondering how the cake turned out, it took 3 hours to cook, and it was the chewiest thing ever, but i was so proud!

From that day I stated to bake almost every day, my mom has been fantastic because she never stopped me, she always supported and encouraged me, even the mess I was making and she had to clean up afterwards.

As the years passed I decided to go to culinary school were I graduated and won a scholarship that took for 3 month as intern in New York to learn from Cipriani. And this was another huge milestone in my life that made me realize how much of free spirit I am and how much I love to travel and interact with people that come from a different backgrounds them mine. I come from a tiny village in Italy, with just 600 souls, it was my first experience so far from home at 19, and being there just blew my mind!

When I came home I was determined to find a job where I could learn as much as possible and after that realize my dream to go live abroad. In the meantime that I was learning I started to develop an interest for the "healthier side" of my job, while learning the basics and the classics I took classes of vegan food and sweet baked products, gluten free and healthy cakes in general. From that moment I started to develop my recipes and now I'm ready to share them with you!

Why the healthy side of pastry? Because I think that a piece of cake can make everything better, because sharing is caring, and sharing a sweet moment with someone we care is one the best things that we can do. And I want to make it possible also for people that might have problems with food allergies or simply want to stay more healthy and don't feel guilty about eating an extra cookie!

My recipes have an international vibe, since I lived in UK, USA, and traveled around Southeast Asia and of course an Italian touch!
